Honestly, how the hell did I just create something so heavenly? Why is this so damn good? Why didn’t I think of this sooner?

BANANA PUDDING!
Blend up: 
Three bananas - mine were mushy, brown, & supporting a few fruit flies. 
Flesh of a young coconut. 
About 4-6oz coconut water.
Lots of vanilla.

Yesterday’s Lunch: Beet & Apple Salad with Quinoa & Chickpeas. The second recipe I’ve tried from Rachael Carr’s The Raw and the Cooked. This salad blew my mind with it’s flavors.
The previous night we had her Grapefruit & Avocado Salad with Lemon Poppy Dressing. I would’ve posted pictures but we could help ourselves from eating it immediately. SO AMAZING. View high resolution
